Work-around

To entrench on a hex not under your control, move your units to the hex.
Right-click on the hex, then select "Advanced Orders".

The advance orders popup has the "Entrench" option on it.

Select it.

Yes, but missiles are not units, are they?

I don't remember them ever having health bars before.

You are correct - if you display just chevrons, then for a single unit you get a single bar and for a stack you get a one chevron and a single bar. IMHO: But people can at least see the hex and can see the actual multiple units over-laying each other. I think that is much more coherent than a bewild...
